Our sharp, crumbly Betta Feta is perfect in these crispy Greek inspired parcels, have them as part of a picnic, as lunch or as an accompaniment to a larger feast.
Serves one as part of a main meal or make two smaller pies as a starter for two.
1 block Betta Fetta
50g vegan butter melted or 50ml olive oil
1 packet of vegan filo pastry
1 tbsp each of white sesame seeds and black onion seeds
Vegan runny honey
Preheat the oven for ten minutes: gas mark 5/125 c/275 f
Take one sheet of filo pastry and brush it with the melted butter or olive oil, lay another sheet of filo pastry on top.
Place the Betta Fetta block in the centre and wrap the pastry around it like a parcel. Turn the folded side to the bottom and brush the top of the pie with the remaining butter or oil, scatter the seeds on top and bake the pie on a baking sheet for 12-15 minutes until golden. Remove from the oven and drizzle with vegan honey, serve straight away...also tastes great cold as part of a maze or picnic.
